Wednesday - Spicy Taco Soup
Thursday - Fish, Cornbread & Black-eyes Peas
Friday - Steak Fajita Chili
So yummy. & with preparation and cooking time, these meals are completed within 20-35 minutes. My favorite has to be the Spicy Taco Soup. You only dirty a total of 4 items while cooking it and is delish with cheese on top and some Tostitos chips. Anything with easy clean up is great in my book. Plus you just throw it together and wah-la! scrumpshiousness.
Here is the great recipe!
1 large can of chicken
1 small onion - diced
2 garlic cloves - minced (or 2 tsp garlic powder)
1 can diced tomatoes
1 can of hot Rotel (or medium if you don't want it spicy.. either way is great)
1 can Kidney Beans - rinsed
1 cup corn
1 pkg taco seasoning
1 pkg ranch dressing mix
3 cups water
Mix all in a pot, and simmer for 15-20 minutes. Top with cheese, sour cream, or avocado and serve with chips :)
